Easy Peasy MusliChristmas has been and gone (pfju !!) and as always I have overbought dried fruit and nuts. I think that dried fruits and nuts are so much linked with Christmas for me that the thought of running out makes me hysterically to stock up, like some oversized squirrel! But what to do with the left over fruits and nuts, leave them for next year? No, let's make some little luxury in this grey time of year. Start the moring with a very delicious musli ! It is easy and lovely. Here is how you do it . . . .
Oats
Nuts
Dried fruits
Seeds (sesame, pumpkin etc)
Raisins
Sesame seeds
(And anything els you fancy)
Oil
Honey
Baking parchment.
Put the oats and some of the nuts (chopped) in a bowl. Here it is important to decide what nuts to put in with the oats, I propose to put in the less fancy nuts and leave the fancy ones like macadamian or pistacchio for the final mix. Pour the honey and the oil over the oats and nuts, just enough to cover and to make it like a loose dough. Put the baking parchment on a baking tray and spread the mixture over . Bake in a medium oven, breaking up the mixture occasionally. Again here you will decide how big bits you want in your musli.
Meanwhile chop up the rest of the nuts and fruits to smallish pieces.. Try and go for many different types of fruits and nuts, will make it more interesting, sesame seeds and pumpkins seeds are always really yummy.
When your oaty/nutty mixture is starting to turn golden take them out and leave to cool. Then add everything together and put in a glasjar to be enjoyed many mornings to come !
Easy luxury, who would have thought it !
